An email was supposed to be sent to my supervisor so they can verify I'm an instructor. It's been a week and they still haven't received it and my verification is still pending so I have no access code for my class and we're missing out on many activities that I'd planned to incorporate with Mindtap.

I would contact Customer Support to see if they know what the holdup is. My adjuncts and students have gotten great results from them in the past few weeks and you can't afford to miss anymore activities!
